homemade stovetop mac and cheese

My favorite part about this super simple mac & cheese recipe is you can personalize it by using different cheeses, spices, or sauces (add a splash of Sriracha if you love heat).

ingredients

  • 1 pound small shell pasta

  • 1 cup heavy cream

  • 2 cups cheddar cheese, shredded

  • 3/4 cup freshly grated parmesan cheese

  • kosher salt

  • freshly cracked pepper, to taste

let’s make this

  1. Fill a large pot with 4 quarts of water and add a couple large pinches (about 2 tablespoons) of salt. Cook pasta until al dente.

  2. Meanwhile, heat the cream in a heavy saucepan or cast-iron skillet over medium heat until it just begins to bubble. Stir in cheddar and parmesan and season with 1/2 teaspoon salt and pepper. Cook stirring often, until the cheese has melted, 5-7 minutes.

  3. Drain the pasta and add to the saucepan. Stir until combined.

NOTES: Don’t forget to try customizing the recipe to your tastes. Try different cheeses (I’ve used a habanero cheddar and that was amazing). Add some garlic for a garlic mac & cheese. Looking for heat, a couple splashes of Sriracha should do the trick.
